Why bread goes stale
Everyone knows what happens to a loaf: it dries out. You leave it a few days and it goes firm and crumbling and sad, and the story is that the water left — evaporated into the kitchen air, wicked away, gone. So you do the sensible thing. You seal the bag. You put it in the fridge, where things keep. And it goes stale faster in there than it would have on the counter, which is the first sign that the story is wrong.
Because the water didn't leave. Seal a slice of fresh bread so that not a molecule can escape, and in three days it is stale anyway — firm, dry-feeling, crumbling at the edge — with every bit of its original water still shut in the bag with it. Whatever stale is, it is not the absence of water. The water is present the whole time. It has only moved.
Here is where it went. When bread bakes, the starch in the flour — packed into hard little granules — drinks the water and swells and comes apart, its long molecules unwinding into a loose, open tangle. That wet tangle is what soft fresh crumb is: a structure caught in the middle of falling apart, still warm, holding its water everywhere at once. And a disordered structure, left alone, does what disordered structures do. It settles. Slowly, molecule by molecule, the unwound starch finds its neighbours again and clicks back into the tight, ordered, crystalline packing it had before it was ever baked — pushing the water it was holding out into the crumb as it goes. The bread firms not because it lost its water but because its starch is quietly re-crystallising, turning back into the hard thing it started as, and handing off its water as it turns.
So stale is not an emptiness. It is an order. Fresh bread is the disordered, generous, open state; stale bread is the same matter, tidied — every molecule filed back into its low, neat place. The loaf isn't wearing out. It is settling down.
Which is why the fridge is the worst place you could put it. Cold does not slow this settling; cold is what the settling likes. The re-crystallising runs fastest a little above freezing — right at fridge temperature — so a loaf in the fridge goes stale in a day the way a loaf on the counter goes stale in three. The only cold that helps is the deep cold of the freezer, which doesn't so much preserve the bread as catch the starch mid-fall and hold it there, unable to click home, until you thaw it.
And it is why the trick your grandmother knew works. Warm a stale slice — toast it, or wrap the whole loaf in foil and put it in a hot oven for ten minutes — and it comes back soft. Not because you added water; you didn't. Heat alone is enough to shake the settled starch back apart, to un-click the little crystals and return the crumb to its open, fresh-feeling state. The staling runs backward. You can do it only a few times — refreshed bread goes stale again quickly — but you can do it at all, which is the remarkable part. The one kitchen ruin everybody treats as final — throw it out, it's gone — was never the loss of anything. It was a rearrangement, and a rearrangement can be undone with the same heat that first made the bread.
The water was there the whole time. That is the part I keep turning over. The thing that looked like drought was only the crumb quietly putting itself away.
