Why popcorn pops

Here is a thing that is, honestly, a small explosion — a real one, going off in your kitchen a few hundred times a minute, and mostly we only notice it by getting impatient when it stops. I want to look at it because it is a delight and because almost nobody's picture of it is right. The picture most people carry is that the corn puffs: that heat makes the kernel swell and soften and go fluffy, the way bread rises or a marshmallow bloats over a fire. That is not what happens. What happens is that a tiny sealed bomb goes off, and the fluffy white part is the debris, blown out and set hard in the half-second of its flight.

Take one kernel and look at it cold. It doesn't look like much: a hard glassy little tooth, almost a pebble, with a pale scar of a dimple where it was pulled off the cob. Two things about it matter, and both are easy to miss because they're the dull parts. The first is that it is not dry. Sealed inside that stony body is a little water — thirteen, fourteen percent of its weight — soaked into the soft starch at the core. The second is the shell around it: the pericarp, the hull, the bit you'd call packaging and spit out if you could. It is hard, and — this is the entire trick — it is very nearly watertight. Hold those two facts together in one hand: water on the inside, a strong sealed wall clamped around it. That is not a seed. That is a pressure vessel with a snack inside.

Now put it in the heat. The water wants to boil, but boiling means turning to steam, and steam needs about seventeen hundred times the room, and the hull will not let it out and will not let it grow. So the water can't boil. It just gets hotter — past a hundred degrees, well past, still liquid, because the wall won't give it anywhere to go. The pressure climbs. Meanwhile the starch at the core, cooking under all this heat and squeeze, stops being a dry powder and turns into a hot pressurized gel, a bead of translucent molten dough held at a temperature it could never reach in the open air. The kernel is now a sealed flask of superheated water and glassy goo, straining outward, and the only thing between that and the room is the hull, holding, holding.

The hull holds until it can't. At around a hundred and eighty degrees — with something like nine times the sea-level pressure pushing out from inside — the wall fails, all at once, everywhere. And now everything that was pent up happens in a blink. The superheated water, suddenly with somewhere to go, flashes to steam and throws itself outward. The molten starch, released from the squeeze, blows up like a balloon into forty-odd times its size, foaming into a tangle of steam-blown bubbles — and in the very same instant, out in the cool air, it flash-dries and freezes solid into that rigid airy white you know. The kernel has turned itself inside out. The pale cloud is the core, everted and set; the little brown flecks in your teeth are the shrapnel of the shell that held it. All of that — the failure, the flash, the ballooning, the setting — is one event, faster than you can see, and you hear it as the pop.

And here is the part worth stopping on, because it upends what you'd have guessed the hero was. It isn't the fluff. It's the hull — the boring shell, the packaging. That is where popcorn lives. Sweet corn, field corn, the corn on your cob and in your tortilla — every one of them has water and starch inside too, and not one of them pops. Their hulls leak. Heat them and the steam just seeps out the sides and they cook, softly, and slump. Only popcorn — one variety in the whole sprawling family of corn — grew a hull strong enough and tight enough to be a proper bomb casing, and that single fact, that unglamorous wall, is the whole reason the thing exists. Which also solves the mystery at the bottom of the bowl. The "old maids," the sullen unpopped kernels — you'd assume they were the tough ones, too hard to burst. They're the opposite. They're the failures. Somewhere in each of them was a hairline crack or a thin leaky spot, and the steam bled quietly out through it before the pressure could ever build, so when their moment came they had nothing left to explode with. The kernel that pops is the one whose seal held to the last. The one that just sits there is the one that sprang a leak. It isn't strength that kills it — it's the leak.

So there's nothing sad here and nothing that fades. Next time the bowl is going off like a little war, know that every white piece in it is a shell that clamped down on its own boiling water and refused to let go, past a hundred degrees, past a hundred and fifty, all the way to the instant it lost — and lost gloriously, turning itself inside out in the losing. The quiet ones underneath were only the ones that let the pressure slip away. Popcorn is the sound of a hull winning right up until it spectacularly doesn't, and I think that is one of the best small facts I know.
